This Scotch benefits from a long fermentation that runs for up to five days, as well as maturation for at least five years in three cask types, Fino butts, first-fill bourbon, and oloroso sherry casks. The island's unique climate will also play a big role in the profile of The Hearach, which was bottled at 46% ABV without chill-filtration or any additional colouring.
As with every Lagg whisky, the production process involved water from the distillery's own borehole as well as a specifically chosen barley variety (Concerto in this case), yeast, and fermentation time tailored to the particular whisky. Corriecravie was then matured initially in bourbon barrels before being finished for approximately 6 months in oloroso sherry hogsheads from renowned producer Miguel Martin in Jerez, Spain
